Not maple flavored corn byproduct, but the real shit made from tapping into a tree in the early spring and boiling down to some 30x concentration. The fluffy coffee thread got me thinking of maple syrup, and I want to talk syrup. I fucking love this stuff.

It could be twice as expensive and I would still buy it. Not just a sweetener, but an ingredient.

Good mixer for Mezcal and Bourbon instead of simple syrup.

Anyway, it's super-nutritious and probably the best American sugar/sweetener.
We have hundreds of maple trees and one of these years I'm going to tap them and make many gallons.

I use it in coffee, cereal, recipes instead of sugar.

The real stuff, never crap. A few years ago, some raw-food people introduced me to a great cold/sore-throat remedy: squeeze a couple lemons, add maple syrup to counter the sourness, add water. Astonishingly effective, whether or not you're down with the raw food thing. (Me, I like cooking. But this lemon-maple drink was great advice.)

We have two sources for some good maple syrup, usually each spring we get a mason jar full of it from my aunt and uncle, who have a farm in west Michigan and make a hundred some odd gallons of it in March. Also my in-laws give us some - they live on a farm in southwest Michigan, but they don't make any. Instead they get some from neighbors who make it, and my in-laws don't want it. My father in law, who grew up on this farm in the 40s and 50s, and has enough sugar maples on the property to make a decent amount of it if they tried, says he prefers "the old fashioned thick stuff". I'm not gonna give him a bunch of shit about it what with us getting a pint of syrup out of the deal, but that just boggles the mind.

marked a buncha sugar maples on our property this fall so we could tap them in the spring. The reduction rate to get sap to be syrup is crazy...something like 40:1. There is a cool old maple shack at the settler's home in the national park near the house and you can buy fresh there in the spring during the run. They bring hug tubs of sap on sleds out of the woods with draft horses to feed that cooker. Always a good afternoon to walk around during the maple fest.

Maple Syrup is obviously not crap.

There is a little maple shop on rte 2 in the UP (about an hour east of gladwin if you're going to thundersnow) that sells late harvest syrup, tapped in the fall rather than the spring. It's much darker, almost like molasses. It's delicious. I can't remember the name of the place, but it's got a big maple leaf out front. The guy said they have a website and you can buy it online. Definitely recommend trying it.
