I didn't see cooking syrup listed, but I'm sure if you call or email they can let you know the deal.

I would also highly recommend their "Natural" wild rice. It's harvested from the lakes (I think in minnesota) not from a farm. It's crazy expensive but it's easily the best rice I've ever had. I don't like wild rice, but this stuff is insanely good.

There is a maple syrup festival here every year. You take a horse out to the woods and watch people dressed up in pioneer outfits make the syrup and sugar in the wilds of West Michigan. The greatest shit I've ever tasted in my life.

Maple syrup is an absolute good.

cooked down our first batch of sap this past Saturday. Started with just over 10 quarts. At a 40:1 reduction we should have arrived at 8 or 9 fluid oz, but we got more like 13 oz. Called it done based on temperature rather than Specific Gravity since I had a temp target, but no SG target. Took 6 hrs and 45 mins to cook down. I expect that if the weather this week plays out the way it's forecast, we should be cooking another batch Wednesday, and a third Saturday or Sunday. I have no idea when the run is going to dwindle.

This is very easy to do if you have trees, people! Our resuts were very good! I baked a loaf of bread Sunday morning and we had french toast made with our own eggs, on home made bread, with homade syrup. Can't beat that very easily...

Fucking delicious. Expensive to buy, but worth it. Ever since the baby arrived I've been making indulgent cooked breakfasts and hitting the syrup bottle pretty hard. I love that it's just tree sap. Damn, tree, you so fine.

If I had trees, man you better believe I'd be tapping that.

I maintain that there are very few foods in the world that the addition of maple syrup would ruin. There certainly aren't any that come straight to mind

Again I cannot make it up to our land to tap. Lack of moolah is this season's reason.

I follow the doings of a group of Native Americans up there and some of them tap yellow birch for medicinal use.

have not, but might on this next batch. I have a buddy who swears by this and says it cuts his cooking time by just over half.

For those wondering, if you freeze the raw sap, you get a block of water frozen over the sugary goodness. Ditch the ice and boil what's left.

The run has started! Put in 7 taps yesterday afternoon and gathered 5+ gallons this morning. Probably have another 5 by the end of the day and with what I get overnight should have enough to cook a batch tomorrow.

Yes, that's pure maple syrup ages in bourbon barrels. $40 a bottle and yes I bought one. Haven't tried it yet.
