espresso grinder setting

hello interns...

the last time i was over there steve told me that you guys do the grinding of the espresso beans...

i just got my new grinder (rancilio rocky, same as the studio) and i wanted to find my proper grind number for the starbucks barista (same as the studio).

what number do you grind at? i've been doing all right at 13...

I can't speak for anybody else here, but I typically grind between 15 and 21, depending on the beans in the machine. Usually anything super-oily ground finer than 15 jams up the spout. Also anything finer than 15 usually seems to slow down the "brew" function on the Barista machine (but then again that's probably a matter of over-use of the machine on our end).

I have precisely this setup, and I grind at 8 or 9.

I don't tamp extra hard--just enough to get the grounds flat.

In the instructions, they describe dialing it down to the minimum and ramping it up for whatever your machine needs, I think.

It's not a bad combination for home 'espresso.'

yum... this seems to be the trick? i tried grinding at 8 before, but i tamped it down hard... it's still coming out a little foamy?? i'm just getting weird about this because i had a espresso from intelingincia on broadway the other day and THAT is what i'm always shooting for... but, they have a $10,000 machine... whatta gonna do?

i'm trying to get that neve and nice live room sound at home!!

I was tamping too hard before. Thanks, Tim! My grind is much finer now.

Yeah. I asked them if there's anything I can buy short of a massive machine to make anything like that they make. It's the best espresso I've had outside of Italy.

They said...no.
