Maybe I should have written "dehydrated and granulated thing" rather than spice, but it's in the spice aisle, with the spices, so, you know.

My wife teased me for years for defending and using garlic powder. "Why don't you just use garlic?" she would ask, and look at me disapprovingly. Well, now she's all for the stuff. It's a secret ingredient in many things like egg salad, tuna salad, chicken salad, scrambled eggs. Its applications are myriad.

Yes, there are times, many, when actual garlic should and will be used, but sometimes...

Am hardly an accomplished cook, so take this with a grain of, um, salt, but...garlic powder has always struck me as an inferior substitute for the real thing.

Not saying it doesn't have it's uses, but real, fresh garlic isn't that expensive or difficult to work with.

Seems like they're all either badly overused or underused, but I'm glad powders exist. I grant garlic's in the first group, and that it's silly as a powder to begin with being that garlic has such good shelf life, but it's so handy for popcorn and a la minute broths, so NC. Now, tomato powder - there's an ingredient.

Garlic powder and onion powder are always super useful. I use it even when I use real onion and garlic. NC

I tend to look at garlic salt or garlic powder as a seasoning. For example, a grilled cheese is nice with some pepper and garlic sprinkled on. You wouldn't ask someone why they were using powdered pepper instead of fresh ones, would you? I used to make gallons of garlic puree on an industrial scale, so yes I can deal with real garlic.

Also, my inner hick tends to agree with that it is the most sensible option in the "Salads With A Mayo Base" corner.

Never mind coatings/breading for things that will wind up in a deep fryer.

Edit: It has also help save the day on at least a couple of really rough looking "Canned"/"Potted" meat instances.

Ditto for similar instances involving grits.

Nothing wrong with garlic powder. Tastes like garlic powder. You want food to taste like fresh/sauteed/roasted garlic? Use cloves then.

What does bother me unreasonably are those glass jars of minced garlic in liquid.

I consider myself a pretty accomplished cook and I use it from time to time. Not gonna crap on it. Like most things, quality versions are better than cheap ones, though sometimes harder to source. Really good herbs and spices can be had from https://www.penzeys.com for those that want good mail order in the US. Plus dude that runs organization is a straight up leftist kinda guy

I use granulated garlic all the time for sauces & rubs, nothing wrong with it. big fan of this stuff.

I use these for pretty much everything. We'll use the raw stuff whenever possible too, but the powders go a long way.

Lately my go-to meal has been basmati in the rice cooker with a bunch of garlic powder, onion powder, little cayenne, and a couple of bay leafs. Also throwing in whatever vegetables we have around. I suck at cooking but I've gotten pretty good at doctoring rice.

I prefer garlic paste when raw isn't available. I prefer it for both the taste and the texture. I can't find it in Italy so I stock up on it whenever I go to Hungary.

curious why you say that. I find myself mincing garlic cloves 3-4 times a week. it would be nice just to open a jar and grab a spoonful or two. I imagine the jar stuff is way less potent and flavorful?


Oh, and garlic powder is a spice. That's what spices are - dried and/or ground up fresh things that would not keep if you didn't dry them and smash them up. Peppercorns, paprika, bay leaf, oregano, celery salt, MIDYETT RUB, etc.

Professional chefs use the shit all the time. And they use the real fresh things too. Horses for courses.
